They are a basic rheostat. You can put a multimeter on them and move
the throttle expecting to see a smooth rise in resistance as you do it.
Mine rises by 1 ohm increments all the way up.

The other way on the older ones at least was to back probe the plug in
and read the voltage with the engine off, AC off and key in the run
position. It should start at .02V and rise to 4.8V.
