What do you think about the slight forward position of the rear end? I was
thinking of pushing it back a little before I order my drive shaft.
At the same time, the wheel is going to move back as it stuffs into the
wheel well, so shouldn't I want it slightly forward?
It's about 1 inch out of center towards the front.

Your axle is still centered as pivots around it's radius arms. Now
if you want your TJ to be able to climb loose rock to the top of the
hill without loosing traction, bouncing, and digging holes as you do,
then convert to Real Jeep type leaf springs:
