Mary Ann,
If you are low on refrigerant your system will start up but as the available
pool is sucked down it will shut off via a 'low pressure switch'. As it
sits the pressure will stabilize and the system will 'click' on again.
The clicking is a electro-magnet clutch on the compressor which is
underneath your hood.. It is quite
noticeable once you know what to listen for.

If I do not turn off the air conditioner, then it doesn't get cool again.
It is only when I turn it off that it will begin to cool again. We put some
refrigerant in a few days ago and looked for leaks. I'll listen tomorrow.

Your electro magnetic clutch gets to hot to where the tolerence between
the magnet aperatus and the clutch is to far. It works for awhile and
then gets to hot, but it keeps working, untill the a/c thermostat tells
the clutch to disengage. Then it disengages.. then when the a/c
thermostat tells the clutch to re-engage, the magnetic aperatus is out
of tolerance and to far from the clutch to engage it, cause it's to hot.
One way to test this is to keep the a/c on full blast with the windows
open, so the car never cools and the clutch never disengages. If the
clutch doesn't disengage and the air stays on for good you know that
this may be the problem. Then close the windows and turn the air down.
If the car cools off and the clutch desengages and then won't re-engage,
this is another symptom of this problem
