Hi Greg, you're correct about aiming toward the pinion with an SYE setup.
To do this on the stock axle, you can use degree shims on the spring
perches:

But since you are swapping in the 9" you will be doing perch mods. Test fit
the axle with the spring perches clamped to the leaf spring. Rotate the axle
as necessary and begin welding. This would be a good time to decide if you
want to do a spring over axle (SOA) setup for more lift... of coarse you
would have to do the front axle as well.
P.S. don't forget to relocate your shock perches as well.
