What would be better 32x11.50 or 31x10.5 15's as far as sticking out of
fenders. I also want to consider how they will fill the wheel wells with a
2" lift

Trying to understand how the 10.5-11.5-12.5 relates to tire width.

I would go with the 8" wheel. I'm running an 8" with my 12.50" tire.
You'll be OK with the 3 5/8", but if you can get 4", you'll be better off.

The 11.50s will stick out 1/2" more than the 10.50s. With a 2" lift, I'd
go with the 32s.
