I tracked down the info - The new head was bought at autozone. I researched
the part number and found the supplier:
MOORE'S CYLINDER HEAD
I called them an one of their techs informed me that the heads they supply
to autozone have hardened valve seats - since you can't buy leaded gas. The
leaded gas provided lube for the valves in earlier engines. So at least the
one new head on the engine has hardened valve seats....I'll have to assume
the second head doesn't. A matching head is a $120 at autozone, but is a
special order item...
