For the amount of work and time it takes to pull the drum, adjust the shoes
and parking brake I'd say it's cheaper - and more certain - to just replace
the shoes.

Seconded, in spades! Cooking off contamination is
not acceptable procdure any more. It's safer to just
put on a new set of pads and no brake shop worth a damn
will suggest anything else. If they do, run.
