I was fortunate enough to be on a prior trip. Mike's duck-on-a-spit is
fantastic !

And now he has taken up trail baking !
(I had his cinnamon rolls on the earlier trip)

I've got to try it this summer...but I should probably start
out easy with game hens or a chicken.

Cinnamon rolls...umm...the scents wafting through the woods

Mmmmm.....

Slow roasted for close to 7 hours with the marinade it was soaked in
overnight cooked down for sauce. The marinade was red wine vinegar,
lemon juice, olive oil, brown sugar, garlic, onion, soy sauce, and
oregano.
